The last time someone asked me to make a Victoria sponge I used the same method just baking it in two sponge tins instead of a tray and then layering with strawberry jam and double cream sweetened with a little icing sugar
I used a offset spatula to spread strawberry jam on the first layer of the cake. This was not the first Victoria Spongecake I have made, but I am pretty sure this is the end of my search for the perfect Victoria Sponge
I used the creaming method of making the sponge batter which gave yet even more lightness but feel free to follow MaryBerry's all in one method and you will still get an oh so soft spongecake, it will be hard to resist taking an extra slice
Adapted from MaryBerry's Cookery Course. With a hint of strawberry in the sponge, light and creamy frosting and a flower on top, these define summer to a T
I have been dying to use these fantastic flavoured sugars that I purchased a the Exeter cake Show made by Sugar and Crumbs, they taste amazing and you can use them in all your baking and decorating just like your normal icing sugar
Kate and I are looking for any type of cake, BUT, a Celebration Cake would be WONDERFUL, and there will be a PRIZE for the BEST cake recipe and post submitted, the prize is a copy of MaryBerry’s Ultimate Cake Book
Middle Tier - Chocolate - adapted from MaryBerry's Baking Bible. I completed a post-graduate course in Primary Education and as a result will be starting a new job as a primary school teacher in a little over a week
Jen made MaryBerry’s lemon yoghurt cake last year and enjoyed the taste and texture that the yoghurt gave to the cake, so that was the inspiration for this recipe, and I think her cakes look SO pretty as well as sounding wonderful with all those great ingredients
