I used these mini loaf cases which I picked up from Amazon (click the image to find them). It’s been ages since I’ve had a really substantial cake, one that wasn’t made using ‘stiffly whisked egg whites’ and air…so I decided to make this, my version of a StickyToffee Pudding cake
Whilst the cakes are baking, make the toffee sauce. Toffee Sauce. Cake. Remove the cakes from the oven once they are ready and prick them all over with a skewer and drizzle a generous amount of toffee sauce over the tops of them
Well I know I said my my stickytoffee pudding was a final indulgence after the overload of Christmas naughtiness…well, maybe that was a tiny fib, but I do have an excuse for this cake… and it’s a good one
