I've been road testing a series of restaurants and pubs in the Brighton and Hove area to find out whose Sunday roast takes the crown for the best in Brighton

Lo and behold, the roastduckcrown. Roasted potatoes of course. I am a huge fan of Hoisin duck, that was my first encounter with duck, a mere two years ago, but I didn't want to try to make duck pancakes, I wanted something a bit different
Remove the duckcrowns from the pan and place on top of the vegetables in the roasting tray. Place the carrot, celery, onion and garlic into a roasting tray and mix well
I make potato galette quite often as it makes a nice change from roasties. Remove duck breasts from crown, (if you're lucky enough to have a good butcher get them to do it for you
Mix all the ingredients for the marinade together except the duck fat. Carefully remove the wishbones from the birds, break the backbone and remove, leaving the crown intact
