Honey roasted duck

Place the duck, breast side up, in a roasting tin. For the duck. Place the roasting tin with the duck juices on a medium heat and deglaze with a little of the stock, stirring with a wooden spoon and scraping any sticky bits from the bottom of the tin

Drain off the water and shake the potatoes around in the dry saucepan with the lid on (this roughens the surface of the potatoes to help make them crispier when roasting in the oven)
