Beef carpaccio

Place each slice ofbeef on a layer of lightly greased cling film, then cover with another layer of greased cling film

Seared beef salad

Place the onion wedges in a roasting tin, then drizzle with the 2 tablespoons of olive oil and sprinkle over the thyme. Drizzle the beef with a little olive oil and season with salt and pepper, then when the pan is very hot, add the meat and cook for about 30 seconds on each side (or longer if you prefer). 300 g beeffillet, cut into 12 thin slices

Beef Wellington

Divide the duxelles between the four steaks, heaping it neatly on top of each one. Brush the edges of the pastry with a little of the beaten egg, then wrap up the steaks in the pastry as tidily as possible

Steak au poivre
