It’s by NigelSlater so that already tells you it’s going to be good but not overly fancy. I’m a big fan of Nigel’s writing and recipes – he does simplicity so beautifully
The recipe is adapted from one in the NigelSlater cookbook entitled The Kitchen Diaries ll. If you have been reading me for any length of time you will know I have a healthy respect for NigelSlater and his cookery
I’m never one to pass up the opportunity to bake and share a cake, so my offering for the picnic was a summer fruits cake based on this recipe by NigelSlater
NigelSlater's Demerara LemonCakeAs I have previously mentioned, I am not much of a baker. So while it was not quite as beguiling as I had intended, an unforeseen consequence was that my drizzlecake now had a sort of lemon curd filling
I decided to seek the help of experts and an hour or so trawling through my cookery books, I had firmly plumped for a LemonDrizzleCake, relying on a recipe from one of my favourite authors, NigelSlater
I also found the toffee sauce to be a little too fruity for me due to the golden syrup, so if I were to bake this again I would use the toffee sauce recipe from NigelSlater's sticky toffee pudding, albeit slightly more indulgent
