I cooked a good quality local free range chicken yesterday – loads of chicken still left when I returned home I searched online for a chicken curry recipe
As a result I created something rather good, a Nigelslater style fridge rummaging session yielded a spicy salad with crunchy leaves, sweet mango and a cooling mint yoghurt dressing that just balanced the heat nicely
Mine was something of a hybrid – I used NigelSlater’s recipe as an aide memoir and adapted it in the way I remember my mum making the dish, without any celery or brandy It was utterly delicious and the perfect autumnal supper – served here with dauphinoise potatoes to mop up all the sauce
Remember, as NigelSlater often says, “a recipe is just a starting place” so always improvise if you don’t have the exact ingredients required for a recipe or tweak it to your own taste

I first came across it in an early NigelSlater book, who in turn got it from Nigella Lawson. I’ve made it several times, although I had to adjust it quite a bit before it came out as I liked it – Nigella does like a lot more cream and butter than is good for anyone’s arteries
Stuffing can really add so many great flavours to a Chicken, but as NigelSlater has mentioned in the past, you shouldn’t need to add anything to a Chicken before putting it in the oven
