We have finally eaten all the Christmas biscuits and the cake tin was looking rather bare, so I had a flip through one of my recipe clipping folders and came across Mary's teatime cake, a recipe from the very talented and delightful MaryBerry and published in BBC Good Food magazine
Our recipe is a MaryBerryrecipe which we have slightly adapted and used our white scone mix, you can actually make four of these cakes from one bag of our mix
Prue Leith will be replacing MaryBerry as a judge, whilst Sandi Toksvig and Noel Fielding will be taking over the hosting duties from Sue Perkins and Mel Giedroyc
Jen made MaryBerry’s lemon yoghurt cake last year and enjoyed the taste and texture that the yoghurt gave to the cake, so that was the inspiration for this recipe, and I think her cakes look SO pretty as well as sounding wonderful with all those great ingredients
Yes, I made the madeira cake, and yes, you make the custard - you could buy both, even MaryBerry in the original recipe countenances the possibility - but actually, I'm finding less and less time to tinker in the kitchen, and this was a welcome excuse to shut myself away, fiddle about, make a mess and create something lovely

The tops were very lightly scattered with flaked almonds, although I must admit I was going to omit these as I intended on icing the cakes, but reading through the recipe, Mary also ices the cakes, so I did as she said and sprinkled the top with the almonds
I haven't decided as yet if I am going to enter any of the baking classes and do foray with the local equivalents of MaryBerry but in the meantime I baked this classic to remind me how it tastes
