I made this one last year using MaryBerry’s recipe. Omit the sherry and cranberry sauce too. If you can tolerate dairy then you could just use lacto-free milk and butter

Pour the mixture into the prepared tin/mould and bake for about an hour (vegetable cakes, according to MaryBerry herself, take longer to bake than ordinary cakes), until a skewer inserted into the centre comes out clean
