The puff pastry was soggy (had a soggy bottom, as MaryBerry would say), and in an attempt to fix that, I overcooked the meat AND set the baking paper underneath it on fire (don’t place those things too close to the grill, people)

The recipe is a MaryBerry one- the official queen of baking- so you know it's going to be good. Recently, I've used this to create a lemon and raspberry bake and a batch of lemon and poppy seed drizzle cakes, but you could also chuck in other variations, such as blueberries or blackberries (especially when they come into season next month), or even just leave it as it is for a plain lemon cake
Yet, when it comes to cake, I’ve noticed that the current trends are moving away from the ‘Simple Life’ with combinations and decorations that would make even MaryBerry raise an eyebrow
Jen made MaryBerry’s lemon yoghurt cake last year and enjoyed the taste and texture that the yoghurt gave to the cake, so that was the inspiration for this recipe, and I think her cakes look SO pretty as well as sounding wonderful with all those great ingredients
I use this MaryBerry with Lakeland tray (affiliate). I baked mine towards the bottom of the oven because my oven is getting old and tends to burn the tops of cakes before they’re done
If you were listening to MaryBerry, you will know that you are looking for a dome and a crack to form on the surface of the cakes, and a light but close texture
And despite what MaryBerry thinks, I believe lemon and blueberry are a fantastic combination of flavours that compliment each other (they are the Hubby's favourite after all) and I couldn't see how one drowned out the other in Jordan's bake
