Traditionally, like an apple pie, a lemonmeringuepie has a pastry base… but I thought I would change it up a bit and make it with a gluten free biscuitbase
Spoon the meringue over the surface of the filling in separate blobs, then spread gently with the back of your spoon to cover the filling to the biscuit-lined edges
Lemonmeringuepie has a nice flavour but it’s a bit boring. The cupcakes are then topped with a small splodge of lemon and a generous sprinkling of crunchy biscuit crumbs
Almost like an easier version of lemonmeringuepie that's bitesize too. A perfect summer dessert, you can replace the graham crackers with digestive biscuits for the pie crust
Gluten Free LemonMeringuePiewithBiscuitBase & Dairy Free. The texture is slightly different to that of a twix I feel – the biscuit is a bit softer with these and the caramel is quite a bit less
