I might try it again in a slowcooker and leave it for much longer. This JamieOliver recipe appealed to me as it could be prepared hours in advance and cooked slowly in the oven
It was a recipe from a JamieOliver a few years back on one of his shows. Place the bay leaves, peppers, tomatoes and stock into the slowcooker and set on high,just while you are browning the brisket
