5 minute meals: Grilled hummus on toast and chilli-tahini kale and tofu salad

These are two recent meals that came together in hardly any time but still tasted delicious. Sometimes, even a 15minute meal seems too much. When it's 2pm on a Saturday and you're keen for food in a hurry, or 8pm on a weeknight and you want a quick but satisfying meal, 5 to 10 minutes is the time frame I want to work to. Just lightly toast two pieces of bread, spread generously with hummus and some halved cherry tomatoes, and grill for up to 5 minutes or as long as it takes to melt the hummus and turn the edges crispy. If you do want something to follow, a 5 minute dessert is a sensible pairing. However, if you're somewhere cold, my vegan sticky date pudding in a mug and banana peanut butter cake in a mug only take 5 minutes to prepare. It might not be Jamie Oliver standards, but a meal and dessert in under 10 minutes. 10 minutes is the time frame I want to work to

Tried&Tested: Jamie Oliver’s Winters Night Chilli

I’m not the biggest Jamie Oliver fan…. I don’t like his ‘Italian’ Restaurants much, and I wasn’t the biggest fan of Fifteen in Cornwall either and he sometimes annoys me on TV, but that being said I do own quite a few of his cookbooks and think he does great family food, and do really enjoy his 30 and 15minute meal books. The chilli fed us both for 2 evening meals and 2 lunches each (8 portions

Jamie's Griddled Kinda Nicoise

Jamie's Griddled Kinda Nicoise

My infatuation with Jamie Oliver is escalating. I was very kindly given Comfort Food for Christmas and am gearing up to cook something from that soon (pregnancy makes everything very slow) but the other night I was cooking for my mother and husband both of whom are trying to be virtuous in January and I'm very aware that the bump isn't getting its 5 a day so I randomly picked this Salad Nicoise from 15minutemeals. No potatoes and no egg but supremely delicious and finished by three of us and pretty easy to cook (and no it didn't take me 15minutes but I'm a pretty slack cooker). 12 black olives (Jamie says stone in, I say stone out). Slice the baguette into 2cm chunks and, if you are following Jamie put onto the hot griddle pan. Pour about 40% of the dressing on to a nice serving platter (Jamie uses a separate one for the dressing and tuna and then places the whole lot on a board with the salad. Put the tuna on the griddle pan and cook for 2 minutes on each side or until blushing in the middle. 12 black olives (Jamie says stone in, I say stone out)
