On this week’s menu was the HummingbirdBakery’s amazing Lemon and Thyme Drizzle (or Loaf) cake. Elldrew’s handy hint is to pour the syrup through a sieve onto the cake – we found that this stops any big lumps of thyme or lemon clumping on the cake
The soda provides a sweet hum of lemon/lime and makes the cake lovely and light. Next, gradually mix in the flour, lemon zest, vanilla extract until smooth
Last night I made the main element by using the HummingbirdBakery chocolate cupcake recipe. I used the BBC lemon curd recipe for this, but replaced the lemony elements with the zest of three oranges and then the juice of two and a half of these (popping the last half to one side)

I was slightly worried they were going to be overrated the way that Hummingbird is here in the UK - they have the biggest name and biggest brand, but their flavours and textures of their cupcakes are severely lacking
This recipe is taken (and slightly modified) from the HummingbirdBakery cookbook. Add in the two eggs, vanilla paste and lemon juice and continue mixing with the fork until all the sugar from the sides of the bowl is incorporated
