well, what with doing my Wartime Kitchen and preparing for Christmas, I have not had time to post any meal plans, or indeed any of my new recipes, but, I am rectifying that today with a NEW recipe that’s just right for all the snow and frost we have been having over the last few days – a Scottish inspired Highland Stew
You can use any herbs or spices of your choice, and curry powder is also a great idea fortheseasoned crust too, in fact, I have been experimenting, and the chicken breast shown in my photos was a curried chicken version, with no herbs, but JUST as tasty and totally delicious
But, it doesn’t have to be that way, and after a couple of experiments on some willing guinea pigs, I have devised a low-calorie and totally delectable pancake recipe forfastdays OR for a healthy breakfastfor those onthe go, Blueberry and Oat Pancakes with Cinnamon
Theportion size is quite generous, but I chose not to make rice for my own supper, instead wilting some spinach and mixing them with some softened onion, cumin and coriander
basically, onthe “points” diet that I have always followed, (and I think that the Pro Points diet may be the same) if you KNOW you have a day coming up where you are going out for a meal or you will be eating MORE than your daily recommended daily points allowance, you can “save” some of your points up from days where you go BELOW your daily allowance, BUT only over the period of ONE WEEK = Fastdaysthen
it’s great as an accompaniment to any meal, as well as being wonderful when made forthe buffet table – Coronation Potato Salad - and just in time for New Year
The Marmalade has been made, for my grand entry into the World’s Original Marmalade Awards, British Farmhouse Breakfast Week is over and January is about to slither out in either an avalanche of snow or a deluge of flooding, and, it is another Meal Planning Monday post – WHERE did last week go
onthe Weight Watcher’s diet, if you don’t use any of your allocated daily points within a seven-day period, they can be “banked” foranother day, such as a day when you are going out to dinner, or you are having a few naughty treats
I enjoyed this today as part of my fast day menu, (the full week’s menu forthe Lavender and Lovage household will follow on) and even Malcolm loved it, although I was kind and served his with some bread and a wee glass of wine
Do you have family recipes that you’ve made in onevariation or anotherfor years. And the chicken came from the local butcher, free range beforethere was ever any category of chicken that wasn’t free range
For me it seemed a lot easier to gauge when the fish was perfectly cooked than using foil or leaf parcels and a steamer onthe hob as I did with my steamed thai style cod
You can of course use wholemeal bread, and I would prefer to have wholemeal bread, but it will almost double the calories forone slice of bread, so I decided to go for white bread this time, and of course, home-made bread would be brilliant too, of course
And yes, I have not posted in two days, which is VERY unusual for me, but I have lots of lovely recipes to share with you over the next few days, as well as some reviews, news, giveaways and a weekly meal plan too……along with photos and my daily thoughts, I hope to be back on track (excuse the pun – all this talk of trains has obviously affected me) very soon
