Remainder of the can of CarnationCaramel. Whatever the reason it was it didn't matter in the end, and unless you're entering a a competition for 'best looking cake' or The Great British Bake Off don't let a sunken cake worry you too much, as long as it's cooked all the way through
You just have to be as stingy as possible with the amount of caramel, so it doesn't flood the cake. I think I severely underestimated how much time moving into a new house takes up even after you move

Once the cakes are cold youcan either dust them with icing sugar or cover them in cinnamon icing. Put a generous teaspoon of the caramel in the indentation of each muffin then place another heaped dessert of the mixture on top of the caramel ensuring it is completely encased until you have used all of the batter up
Then ice your cupcakes and I used naughty chunks of fudge to decorate. You would be mad not to send these cakes into overdrive with a whipped toffee buttercream topping (this is such a delight)
I love fudge and I like making it but goodness me it can be tricky to get it right. You may notice at this point that it is still slightly soft but don't panic, it's not ruined, once cut into smaller squares and being left a little while it will firm up, dust lightly with icing sugar and there you have it, scrummy choc orange fudge - Quick and delish, shame I forgot a photo this time but I'll add one soon
