This is simply one of the nicest cakes I’ve made – sweet or savory. Below the recipe I give links to other vegetablecakes suitable for the Easter table, or for any time you fancy eating cake for dinner
For this postcard recipe I want to share with you one of the cakes I made for afternoon tea that although may not have helped us in Greece with any lightening of the figures it uses olive oil rather than butter and mostly honey rather than sugar so seemed a good comprise for a treat
We made this as square sponge and topped with a light icing, however you could just as easily top with a cream cheese frosting or even bake two and sandwich them together with cream cheese frosting and decorate
I like sultanas and nuts in my carrot cakes, and so I recreated the recipe with a few adaptations. Carrot cake is one of those ultimate comfort food cakes
I also decided to use oil instead of any butter as I feel with chocolate cakes, you really want them as moist as possible, nobody wants to choke on cake crumbs
But, it is, without a doubt, one of the nicest cakes that I have had the pleasure of baking and wasn't in our cake tin for very long at all - testament to just how tasty it was
Note, I was pushed for time when I made this tart (with so many other dishes to create) and I cheated a little and bought ready-made puff pastry which happens to be vegan anyway (check the packet when buying)
To achieve this pure white buttercream, it must be madewith shortening (solidified vegetable fat) and artificial vanilla – neither of which appeal to me very much

It was during these building moments I could sense the pie cooking away as the pastry turns a golden brown and turning crisp with little flakes which is made by using the lard in the recipe
the cakes can be baked and the salted caramel made one day and both be refrigerated overnight, then the following day make the swiss meringue buttercream and ganache and assemble the cake
You can cut the two cakes in half for a multi-layered cake if you wish, the frosting will still be sufficient with thinner layers in-between each sponge layer
