In a large frying pan melt the goats’ butter and cook the mushrooms until soft then add the garlic andspinachand continue cooking until the spinach has wilted, remove from the heat and set to one side
Of course you could make this as a lasagne instead – just layer up the squash mixture, the cheese sauce and the pasta sheets in the usual way, and put plenty of grated cheese on the top
Layers of sweet roasted butternutsquash, a creamy (and vegan) pesto béchamel, and roasted cherry tomatoes pack this with flavour between the sheets, and a breadcrumb and pine nut topping give it a lovely crunchy top without the need for cheese
