To make the beetroot salad, finely slice the beetroots and place in a serving dish, in a small bowl mix together the Greek yogurtand fresh mint, spoon the yogurt dressing over the beetroot and serve together with the stuffed peppers and maybe a green salad

When you cut up the big eggs to mix into the cheesecake, try to pull them apart as you do so, they are very sticky and can end up in one giant clump otherwise
