Ingredients

  • 300 g dried fruit – sultanas, currants and raisins
  • 75 g mixed peel, chopped
  • 75 g glacé cherries, halved
  • 300 ml hot, strong, black Yorkshire tea
  • 200 g soft, dark brown sugar
  • 225 g self raising flour
  • 1 egg, beaten
  • ½ tsp baking powder
  • 1 tbsp black treacle
  • 75 ml dark rum or cognac
  • 1 tsp mixed spice
