Ingredients

  • For the cake
  • 125 g unsalted butter, softened (8 1/2 TBS)
  • 125 g caster sugar (2/3 cup)
  • 2 large free range eggs, at room temperature
  • 125 g plain flour (1 1/4 cup)
  • 2 tsp baking powder
  • 1 firm pear, peeled and chopped
  • 1 firm apple, peeled and chopped
  • 1 TBS freshly squeezed lemon juice
  •  
  • For the crumble topping
  • 60 g plain flour (10 TBS)
  • 1/4 tsp powdered ginger
  • 1/4 tsp ground cardamom
  • 1/4 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 3 TBS soft light brown suar
  • 50 g chilled butter, cut into cubes (3 1/2 TBS)
  • 2 TBS old fashioned oats
