Ingredients

  • 175 g slightly salted butter
  • 200 g caster sugar
  • 3 medium free range eggs
  • 1 tbsp baking powder
  • 200 g plain wholemeal flour
  • 1 apple (I used a large Pink Lady – about 175g before peeling and chopping)
  • 12 muffin cases
  • 12 hole muffin tray
  • 25 g butter
  • 40 g caster sugar
  • 65 g plain wholemeal flour
  • Baking sheet
  • 250 g slightly salted butter
  • 750 g icing sugar
  • 80 ml whole milk
  • 1/2 mixed spice
  • Piping bag
  • Star nozzle
