  • 15 g caster sugar
  • 32 g water
  • 4 g gelatine leaves
  • Gingerbread (recipe for 2 loaves)
  • 320 g of honey
  • 1 large egg
  • 110 g unsalted butter
  • 130 g fresh whole milk
  • 270 g plain flour
  • 9 g bicarbonate of soda
  • 6 g ground cinnamon
  • 1 g ground cloves
  • 1 g ground cardamom
  • 2 g ground ginger

  • 100 g caster sugar
  • 150 g whipping cream
  • 35 g diced
  • 15 g caster sugar
  • 15 g water
  • Gingerbread
  • 2 loaf pan
