White Chocolate CrèmeBrûlée with Passion fruit, adapted from a BBC recipe. In this version, the white chocolate adds extra rich and creaminess to the custard that always contrasts so well with the dark caramel crunch of the topping
I have to admit that even though I love crèmebrûlée, I've never made it myself, from scratch. If you like custard, even more - if you like crèmebrûlée, do try to make it yourself
Creme Brulee is a french dessert made with cream,egg yolk, sugar, and flavours. The prepared mix is baked in a water bath to get the pudding consistency
Sprinkle 2 teaspoons of turbinado sugar (next time I will try regular white sugar because I think it will give a better Brulee crunch) over each ramekin
In a saucepan, pour the milk, cinnamon stick and the lemon peel. Bring to a boil over medium heat. When starts boiling, remove briefly the pan from heat and let cool about 5 minutes (remove the lemon peel and the cinnamon stick)

Once the truffles have set, melt the white chocolate in the microwave until smooth. The toffee bits inside the buttery cookie give it excellent crunch + texture, and I especially love the addition of the white chocolate and turbinado sugar on top for that crackly, signature creme brulee flavor and texture
The perfect crèmebrûlée has a soft creamy custard filling and a crisp caramelized sugar topping. CrèmeBrûlée is a classic dessert which is an all time favourite of mine
When I think of French cookery at its finest I think of the amazing Raymond Blanc so of course to make some Crèmebrûlée’s I first consulted his recipe book
We’ve woken up to yet another rainy Autumn morning in Sydney today. However, all is not lost. For me, days like these are the perfect excuse to bake and warm things up in the kitchen
It was all lovely and creamy white, but as soon as the coconut sugar began to dissolve with the heat, the creamy white coconut turned into a coffee caramel colour
