The brownies are on the cakey side (as I wanted them), but if you prefer a denser, more fudgy brownie then you can omit the baking powder from the recipe, and make sure that you only bake them until a skewer inserted into the centre just comes out cleanish – a few moist crumbs is perfect
Reduce mixer to low and slowly add the sugar a few cups at a time, beating until incorporated. Then frost the cakewith the remaining frosting as desired
Back in India when we were kids we were familiar withchocolate or vanilla or butterscotch, but when we moved to UK few years back i was exposed to all different tastes of cakes
I grabbed the opportunity with both handsand thought I'd feature this Red Velvet Strawberry Cake alongside some of my most popular and seasonal dishes, such as the Red Dragon Burgers, Rhubarb and Puy Lentil Curry and vegan BLT

This recipe itself is a variation on a recipe inspired by Michael Caines. The topping is based on the standardcreamcheeseand icing sugar mixture, but I add melted whitechocolate
White Hot Chocolate. I made some orange sugarpaste carrots (I colouredwhite sugarpaste with Wilton Golden Yellow and Rose Red paste for the colours) for the top of the cake by rolling fat cones and then using a cocktail stick to press in three evenly spaced horizontal lines across the body of the carrot
I also want to mention Herbs, Spices & Tradition with Baked Asparagus – I love that this is entered into #Bakeoftheweek – completely the spirit of the linky that anything baked is valid …and I don’t eat enough Asparagus, so thanks for the reminder
All I could think yesterday was 'I need some chocolatecake' and I ended up making said cake on autopilot – the mere actions of measuring the ingredientsand greasing the tin were so familiar and soothing in themselves, I felt much better afterwards
