Ingredients

  • 1 cup brown rice flour
  • ½ cup rice bran (or oat bran)
  • 1 ½ teaspoons baking powder
  • 1 egg 2 tablespoons olive or canola oil
  • 1 tablespoon honey
  • 1/4 cup mashed banana (about 1/2 medium)
  • ¾ cup orange juice
  • 3/4 cup berries (this time I used chopped strawberries)
