With a stew that has a similar consitancy throughout, a little crunch always livens it up. Dumplings are one of those naughty but nice things that make a stew evening more comforting
For the stew. There’s just something about soft, spiced lentils and crisp sweet onions that sings comfort food, and when you top the whole thing off with herby dumplings you have a match made in heaven
Serve the meat surrounding the vegetables and dumplings, with some of the liquid poured over and some in a gravy boat, and sprinkle with chopped fresh parsley
2) Heat the lard until smoking in a large casserole and fry the beef hard in batches until crispy and golden, do not stir as this will make it release moisture and stew. 5) Add the beef, beer and bay leaves, bring to the simmer stirring occasionally and simmer for 12 hours (an oven at around 90C is perfect) with a lid on. Longer won't hurt and you can probably get away with shorter, but at least 3 hours if you're in a rush. 7) Spoon the dumpling mixture onto the top of the stew and replace the lid, allow to steam for around 1 hour back in the oven. 8) Serve with mash and veg or just a big chunk of bread

Spray a large non-stick casserole pan with low-calorie cooking spray and place over a medium heat. When the stew has been cooking for 2 hours, remove the lid and place the dumplings on top. Divide the stew and dumplings equally between 4 bowls and serve with your favourite vegetables
My all time favourite casserole / stew is based on Jamie Oliver's Jules Beef stew, Jo had the idea of including butternut squash in his vegetables which cooks down to a satisfying mush in the gravy and not browning the meat
