I added two tablespoons of the syrup to replace the milk – it turned out lovely, the ginger gave the cake a very gentle warmth without overpowering the other flavours

Our latest cake club theme was free from cakes and as I have made this cake a few times glutenfree previously successfully, I wanted to challenge myself and make it dairy free too, as often ceoliacs also suffer dairy issues as well
A few weeks ago my good friend brought a chocolate cake into work for her birthday. They were kind of right but were pleasantly surprised when I confessed it was glutenfree and had no eggs, butter, ‘real’ chocolate and contained natural sugar and natural cacao powder
This type of cake would normally be disastrous if I tried to make it glutenfree, but with the ready mixed flour and a few tweaks of the original recipe, it turned out remarkably well
You could experiment with using white chocolate as a topping too, but firstly, it's not usually dairy free, secondly, it didn't look quite so nice once cooled and set, and thirdly, it just didn't taste as good, which is why I haven't put it as a suggestion - it was my favourite Green & Black's organic white chocolate as well
I've added some orange to my cake as well and spent longer than was probably necessary debating with myself whether I should call it Carrot Cake or Carrot & Orange Cake
You can of course make cornflake cakes instead if you prefer… I used to love them as well. They are perfect for everyone to enjoy, what welove about them is that they are really simple to make AND they are really light to eat
These would also go really well along side a side portion of rice or some petit pois. The mixture might be a bit sticky so a sprinkling of glutenfree flour will help stop the cakes sticking to your hands too much
To keep these cookies lactose free I went for dark chocolate chips which I actually prefer as the bitterness of the dark chocolate offers a lovely contrast along side the sweet raspberries
