Warm Lentil Salad with Walnuts & Goats' Cheese

Ingredients

  • 225 g Lentils
  • 40 g Walnuts, roughly chopped
  • 1 small red onion, finely chopped
  • 1 bay leaf
  • 1 clove garlic, crushed
  • 1 heaped tsp of thyme leaves, chopped
  • 1 tbsp olive oil
  • 1 fat clove of garlic, peeled
  • 1 level tsp sea salt
  • 1 rounded tsp powdered mustard (I used just regular Dijon mustard)
  • 2 tbsp balsamic vinegar
  • 2 tbsp walnut oil
  • 3 tbsp olive oil
  • black pepper
  • 2. Then fry the walnuts in the oil in a pan for about a minute, being careful not to burn them
