Ingredients

  • 1 litre/1¾ pints vegetable oil
  • 1 kg/2lb 4oz beef dripping
  • 400 g/14oz chipping potatoes, peeled, cut into batons
  • 15 g/⅔oz fresh yeast
  • pinch salt
  • pinch sugar
  • 175 ml/6fl oz tonic water
  • 200 g/7oz plain flour
  • 25 ml/1fl oz vodka
  • 1 tsp cider vinegar
  • 4 x 175g/6oz cod (or other white fish such as coley or pollack) fillets, skinned, pin boned
  • 250 ml/9fl oz red wine vinegar
  • 1 bay leaf
  • ½ tsp ground coriander
  • ½ tsp ground cinnamon
  • 75 g/3oz light soft brown sugar
  • 1.6 kg/3lbs 8oz chopped tinned tomatoes
  • 1 tsp salt
  • 1 tbsp English mustard powder
  • 1 garlic clove, crushed
  • Tabasco sauce
  • 2 tbsp tomato purée
  • 1-2 tbsp cornflour
