Ingredients

  • 500 g pasta (I used whole-wheat conchiglie but any chunky pasta shapes will work here)
  • 3 bell peppers in various colours (diced)
  • 250 g cheese (grated)
  • 2 – 3 tbs home-made smokey fajita seasoning mix
  • 3 tbs flour
  • 3 -4 tbs butter
  • 400 ml boiling water
  • 1 large vegetable cube
  • 1 tbs died oregano
  • 2 x 400 g tins of chopped tomatoes
  • ½ tbs golden caster sugar (or other fine sugar)
  • sea salt (to taste)
  • 2 – 3 tbs of cream or full fat milk – optional
