I love to sneak in extra vegetables wherever possible in our family meals, in an attempt to be healthier and to help us exceed our five a day, so I add extra veg to my shepherdspie by stuffing the meat mix with extra carrots, peas and onions, and adding sweetpotato to the traditional mash topping
It’s also packed full of nutritious brown lentils that are an ideal source of protein for a vegetarian or vegan diet and great to give you an energy boost, stabilise blood sugar, and improve your digestive health
Transfer to prepared baking dish, and top withmashedpotatoes. Once mashedwith great quality olive oil and a good amount of fresh sage, no one would even think you didn’t dirty pots to boil them
Spread the sweetpotatomash over the top, scuffing it up with the back of a spoon or fork. Add the almond milk, season with salt and pepper (optional) and mash until smooth
a splosh of unsweetened soya milk (or standard milk). While this is cooking, boil the potatoes until soft, then drain and mashwith the dairy free spread, then season with salt and pepper

Last year, I made this recipe for SweetPotato Skillet Stack with Srirracha Orange Glaze – delish. Place in large bowl and mash the potato and cauliflower with the milk
Once they have softened (poke them a little with a fork), drain the water, add butter and give them a good mashwith a fork - I like my mash to be a little chunky but there's nothing stopping you from using a masher or ricer to make silky smooth mash instead

Or you could simply make one large pie and top it with puff pastry or make individual Pot Pies. This recipe is my lazy version made with tinned Sarsan Ka Saag but the memories of eating it are rooted in my childhood days and evoke happy and carefree times
