Spicy Couscous Veggie Burgers Author: Chris at Thinly Spread Serves: 2 burgers Prep time: 10 mins Cook time: 15 mins Total time: 25 mins Print A lightly spiced homemade veggie burger which holds its own on the Barbecue! Ingredients 100g (8 Discs) of Iceland frozen sweet potato 200g (2 cups) of Iceland frozen couscous with vegetables

tamari soy sauce Freshly ground black pepper 1 egg, lightly beaten 50g wholewheat breadcrumbs Burger buns, fresh tomatoes, ketchup, mustard or mayonnaise to serve. Instructions Cook the frozen mashed sweet potato and couscous mix according to packet instructions (7 minutes in the microwave for the couscous and 5 minutes for the sweet potato) Mix the sweet potato and couscous together in a bowl, add tamari and taste - add pepper to taste Stir in the egg Add the breadcrumbs and mix well Press half the burger mix into a lightly oiled 9cm round pastry cutter, remove the pastry cutter carefully, pushing the burger mix down gently with your fingertips as you go (or forgo the cutter and form it all into a rustic burger shape with your hands!) Repeat with the remaining mixture Chill for half an hour Cook on a hot grill for 10 - 15 minutes, turning occasionally or in an oven at 200C for 15 - 20 minutes, turning once Serve in soft burger baps with your favourite trimmings 3.5.3208
Heat a splash of vegetable oil in a large frying pan and place the burgers into it. (This recipe makes 8 burgers). Separate the mixture into 8 equal balls and shape your burgers. Fry the burgers for 6-8 min and they are ready to eat. 8 burgers)
I served it with spicy potato wedges, salad and my syn free coleslaw. Use a heatproof bowl to put over the top off all the burgers in the pan, this helps the cheese melt
Place in a bun and top with BBQ sauce. Fold the mixture around to seal and form your burgers. This recipe makes 4 burgers and when fed to Nick he described them as "INCREDIBLE. Grill burgers over medium-high heat, flipping once until cooked (about 4 minutes each side for a medium burger)

Most pub grub restaurants will have a version of a BBQ chicken stack or hunters chicken on the menu. Chicken breast with lashings of BBQ sauce, bacon and cheese- as you can imagine it is calorific and can be up to 30 syns
