Ingredients

  • For the fruit and caramel
  • 200 g caster sugar plus 2 tbsp water for the caramel
  • 3 apples, peeled – slice two and dice one
  • Zest of 1 orange – 1/3 (the rest goes in the sponge mix)
  • For the sponge mixture
  • 170 g salted butter, softened
  • 170 g golden caster sugar
  • 170 g self raising flour
  • 3 eggs – important that your eggs are at room temperature
  • 50 ml milk
  • 1 tsp good quality vanilla extract
  • 1 tsp ground cinnamon
  • 1/2 tsp mixed spice
  • Zest of 1 orange – 2/3 (see above!)
  • 1/2 tsp bicarbonate of soda
  • 1 tsp lemon juice
