Ingredients

  • 1 kg chicken breast, cut into bite-size pieces
  • 100 grams of mushrooms, thinly sliced
  • 1 green bell pepper, trimmed, deseeded and cut into inch sizes
  • 1 red bell pepper, trimmed, deseeded and cut into inch sizes
  • 3 – 4 celery stalks, trimmed and cut
  • 2 medium potatoes, quartered
  • 1 large aubergine (eggplant), thinly peeled and cut into inch cubes.
  • 1 large onion, peeled and chopped
  • 1 heaped tbsp of tomato paste
  • 2 cups water
  • 2 tbsp Olive Oil
  • Chilli flakes
  • Salt and Pepper to taste
