Ingredients

  • 2 Large Tomatoes, sliced into 4 rounds each
  • 200 g Fresh Mozzarella, sliced into 6 rounds, mimicking thickness of the Tomato rounds.
  • 2 tbsp Flour
  • 2 Eggs, beaten
  • 4 tbsp Breadcrumbs
  • 1/2 tsp Dried Basil
  • 1/4 tsp Cayenne Pepper
  • Salt & Pepper, to taste
  • Oil for frying
  • 100 ml Balsamic Vinegar
  • 2 tsp Brown Sugar
  • Juice from 1/2 Lemon
  • 2 tbsp Extra Virgin Olive Oil
  • Salt & Pepper, to taste
