Ingredients

  • 2 chicken legs and 1 breast
  • Parsley
  • 1 carrot
  • 1 stock cube
  • 1 stick lemon grass
  • 1/2 cup coconut milk
  • 1 small red chilli
  • Fresh corriander
  • 6 rounds of ginger
  • 2 juniper dried fruit
  • 2,5 tablespoons fish sauce
  • 1 pinch cayenne
  • Oyster mushrooms
  • Lemon / lime juice to taste
  • Kaffir lime leaves
  • Galangal root
  • Bamboo shoots

Instructions

    Chicken broth:
    Legs, breast, carrot, corriander, parsley, stock cube - replace greens with fresh ones half way

    Strain into another pot
    Add coconut milk to the clear broth
    Add everything else than from broth, only chicken breast - apart from mushrooms - infuse slowly and balance fragrances
    Add mushrooms and cook until they are soft
