You can pimp up aplainsponge with chocolate chips, cherries, raspberries, jam, sprinkles, flavourextracts, nuts, blahblahblah you get the idea… There area few tricks andtipsthat I have stolen from other bakersalong the wayand some that I havelearnt through my own baking journey
So I tried to master this chocolateVictoriaSpongecake twice before I got to this (sadly I didn’t get a photo of the whole cakeasAlexander tucked in before I could #mummybloggerproblems) but this is honestly the most delicious chocolatecake I’ve ever baked or even, eaten
For the jam, place the strawberries in alargesaucepanand crush with apotatomasher. Drizzle the jam over the cream, place the sponge tops on and lightly sift icing sugar over the cakes

No more than you would need forawheat-basedspongecake. However there is alsoa little tinge of sadness, because once Wimbledon is over, there will be no more tennis for quite a while
I love lemon cakes in allforms so this was going to go down well. For the sponge. I decided to use up the last of this in a slight lemony twist on aclassicvictoriasponge
ASSEMBLE - do this immediatelybefore serving. Total Time. Simply turn bottom cakelayer upside down to createaflatlayerfor the filling andplace the jam on the bottom
