My first post for February’s ThriftyandOrganicMealPlanner is all based around the wonderful organic ingredients of root vegetables, forced rhubarb, honey and of course a wonderful free-range whole chicken……
Not only are my recipesfor June easy to make and very seasonal, but they yield lots of leftovers, which brings the cost per person price down and keeps them very thrifty as well as organic of course

well, what with doing my Wartime Kitchen and preparing for Christmas, I have not had time to post any meal plans, or indeed any of my new recipes, but, I am rectifying that today with a NEW recipe that’s just right for all the snow and frost we have been having over the last few days – a Scottish inspired Highland Stew
I have decided to “lighten” up some of my existing recipes, especially ones that I enjoy, and this recipe for Low-Calorie Haddock Goujons with Garlic Panko Crumb is a slightly adapted version of my Low-Fat Cumin Scented Plaice Goujons with a Panko Crumb recipe
You can of course use wholemeal bread, and I would prefer to have wholemeal bread, but it will almost double the calories for one slice of bread, so I decided to go for white bread this time, and of course, home-made bread would be brilliant too, of course
I am finding myself being drawn more and more to comfort food recipes, as autumn deepens and the first frosts appear, and so it’s with great pleasure that I share my hearty Hungarian Savoury Minced Beef, this is a real comfortmealand is low in calories, but, it is also suitable for a mid-week family supper – frugal andthrifty it may be, but it certainly doesn’t lack in flavour
I have already been preserving in the kitchen with my quinces and figs, and I have some exciting new recipes to share over the next few weeks……quinces have also made an appearance in some savoury recipes I have created, it’s a bumper crop for them this year, although I do have a small problem with mould due to the wet weather
I have mentioned before how much I love chorizo, we had some left over last week, along with a few leftovers hanging around in the veggie drawer so I decided to add a tray bake to our weekly menu, it used up all of the veg that was going to be thrown out and all it cost me was the price of some diced chicken and an aubergine
Have a great week, and do look out for the start of my Christmas preparation posts towards the weekend and early next week, I have some lovely new recipes to share with you all
