Ingredients

  • For the rhubarb compote
  • 700 g rhubarb - trimmed weight
  • 250 g caster sugar
  • 100 ml water
  • 2 inch piece of root ginger, peeled and grated
  • For the muffins
  • 500 g rhubarb compote
  • 125 ml rapeseed oil
  • 2 eggs 100g caster sugar
  • 250 g plain wholemeal flour
  • 2 tsp baking powder
  • 1 tsp ground ginger
