Ingredients

  • 2 tsp dried thyme

  • leg quarters
  • 2 tbsp sunflower oil
  • 4 rashers of rindless smoked back bacon
  • 2 medium onions
  • 2 celery sticks
  • 150 g small chestnut mushrooms
  • 500 ml bottle of dry cider
  • 300 ml chicken stock
  • 1 chicken stock cube
  • 2 bay leaves
  • 400 g Chantenay or other small fat carrot, trimmed and peeled
  • 2 slender leeks
  • 2 cm slices
  • flaked sea salt
  • freshly ground black pepper
