Ingredients

  • 4 tbsp soy sauce (or gluten free Tamari)
  • 2 tbsp natural peanut butter
  • 3 tbsp lime juice
  • 1 tbsp pomegranate molasses (or date syrup)
  • 2 tbsp pure maple syrup
  • 2 tbsp sweet chilli sauce (check gf)
  • 2 tsp sriracha or other hot chilli sauce (check gf)
  • 125 ml/1/2 cup water
  • 400 g/14 oz rice noodles (I used green tea and black rice noodles)
  • 400 g/14 oz firm tofu, drained, pressed and cut into chunks
  • 1 large carrot, sliced into thin rounds
  • 1 courgette, sliced into thin rounds
  • 4 spring onions, sliced
  • 2 tbsp sesame seeds (or roasted peanuts)
  • 2 tbsp fresh coriander, roughly chopped
  • 2 tbsp fresh mint, roughly chopped
