Ingredients

  • For the spice mix
  • 1 tsp Fennel seeds
  • 1 tsp Cumin seeds
  • 1 tsp Coriander seeds
  • 1 tsp Celery seeds
  • 1 tsp Black peppercorns.
  •  
  • For the sauce
  • 1 x White onions, grated
  • 2 x Garlic cloves, grated
  • 25 ml Veg oil
  • 125 ml Apple juice
  • 125 ml Malt vinegar (Criggy uses cider vinegar but I had a vat of malt to use up)
  • 1 x Apple, cored, peeled and grated
  • 25 g Smoked Maldon sea salt flakes
  • 50 g Chipotle paste (Waitrose do it here)
  • 125 ml Maple syrup
  • 125 ml French's American mustard
  • 210 g Pomegranate molasses (also from Waitrose)
  • 125 g Apricot jam
  • 1/2 Can chopped tomatoes
