  • 400 g pack
  • 200 g jasmine rice
  • 400 ml boiling water
  • oil
  • 1 tablespoon
  • 300 g sweet potato
  • 1 cm cubes
  • 1 red or yellow pepper
  • 100 g baby sweetcorn
  • 3 tablespoons red
  • curry paste
  • ¾ 400 ml tin of coconut milk
  • 100 g mangetout
  • 1 lime
  • 2 tablespoons coriander leaves
  • 10 minutes Me
  • 8 minutes Take the rice off the heat, but leave the lid on
  • 1 tablespoon of oil
  • 3 minutes until brown
  • 1 minute Next add the red curry paste and stir fry for
  • 1 more minute
  • 200 ml coconut milk
  • 7-8 minutes until the sweet potato is soft
