  • 2 garlic cloves, crushed
  • finely chopped
  • 2 tsp Thai red curry paste
  • 2 tsp of coriander stalks, plus leaves to garnish later
  • 400 ml can of light coconut milk
  • 2-3 large Rooster potatoes, peeled and chopped into roughly inch square pieces
  • 100 g spinach, finely chopped
  • 1 tbsp peanut butter (smooth or chunky is fine)
  • 1/2 a lime plus wedges to serve
