Ingredients

  • 300 kcal per portion
  • 100 g Shallots
  • finely chopped
  • 2 cm piece of fresh ginger
  • 2-3 Green finger chillies
  • 1 Red chilli
  • 30 g of Fresh coriander (stems and leaves) roughly chopped
  • 1 tsp ground coriander
  • 1 tbsp olive oil
  • 20 ml of tap water if needed during blending the paste
  • 4 tbsp
  • 400 ml can of full fat coconut milk
  • 4 Chicken breasts
  • 200 g Broccoli
  • 2 tsp palm sugar
  • 200 g Pak choi
  • Extra freshly chopped coriander leaves
  • Sliced spring onions
