I have cooked this Quick ThaiGreenChickenCurry several times now, adapting it from this ThaiGreenCurry in a Hurry recipe from the Recipe community and I finally got it exactly how we like it

And it can most certainly be made with a selection of vegetables – capsicum (peppers), carrots, green beans and cabbage would be great used in this dish

And homemade Thaigreencurry paste is definitely one I’ll do again. In the past I’ve always been a bit afraid of making homemade Thaicurry paste – it always seemed to need so many exotic ingredients
