Any vegetables work well in a quiche but the tenderstem is particularly good for texture and crunch. This broccoli andspinach one is divine and uses cottagecheese for a little healthier difference
i've gone for a classic spinachand mushroom but you could easily replace the mushrooms or spinach with shredded sprouts which I think would be delightful

This is my take on a lighter version of a Spinachand Ricotta Cannelloni that I make I’ve made it Slimming World friendly by switching the Ricotta for low fat CottageCheese but fel free to use Ricotta just as well

Spray your pan with frylight and empty spinach into the pan sprinkle with the nutmeg stir through and leave to cook down whilst you prep everything else

As well as lots of delicious cheese I’ve packed these muffins with spinachand red peppers too, cause you know I like to sneak some veggies into as many recipes as possible
And to be fair, these broccoli, sweetcorn andcheese muffins are freaking delicious, so even if you aren’t trying to convince a small child to eat broccoli, they’re worth baking
