Syn Free Spicy Sweet Potato, Red Pepper and Carrot Soup

Ingredients

  • 1 large sweet potato, peeled and chopped (or can use butternut squash)
  • 11 large carrot, finely chopped
  • 11 red pepper, finely chopped
  • 12 cloves of garlic, crushed
  • 11 medium onion, finely chopped
  • 1½ tsp of turmeric
  • 11 tsp of cumin seeds
  • 11 tsp of cumin
  • 11 tsp of coriander
  • 11 tsp of paprika
  • 1 pinch of cayenne pepper
  • 11 litre (4 cups) of vegetable stock
  • 1 Salt and pepper to season
  • 1 Spray oil
  • 1 Finely chopped coriander
  • 11 large sweet potato, peeled and chopped
  • 11 large carrots, finely chopped
  • 1½ tsp of turmeric
  • 11 litre (4 cups) of chicken or vegetable stockSpray a large deep saucepan over a medium-high heat with spray oil.
  • 1 Add onion, garlic, cumin seeds and turmeric and fry for a few mins to soften.
  • 1 Add carrots, red pepper, cumin, coriander, paprika and pinch of cayenne and stir well to coat
  • 1 Add the stock and sweet potato
  • 1 Bring to a boil and then simmer for 1 hour until all vegetables are softened
  • 1 Roughly blend the soup with a stick blender, (you don’t want to over blend, as the soup is delicious with some chunks of vegetables)
  • 1 Season with salt and pepper to taste
  • 1 Serve topped with fresh coriander
  • 1 Spray a large deep saucepan over a medium high heat with spray oil.
  • 1 Add onion, garlic, cumins seeds and turmeric and fry for a few mins to soften.
  • 1 Add in the stock and sweet potato
