Syn Free Roasted Tomato and Basil Sauce

  • 500 g (17.5oz) of cherry or vine tomatoes
  • 13-4 whole cloves of garlic
  • 11 small red onion, finely chopped
  • 1 Handful of fresh basil
  • 1 salt and black pepper
  • 1 Spray oil
  • 11-2 tsp of sukrin gold or other sweetener of choicePreheat oven to 200 or 400f
  • 1 Place tomatoes, onion and garlic in an oven proof dish,
  • 1 Spray  with the spray oil and season with a little salt. Mix to evenly coat.
  • 1 Roast in the oven until tomatoes have softened and onion and garlic have started to caramelise. Approx 45 mins depending on your oven.
  • 1 Add the mixture to a blender, with the fresh basil, sukrin gold and blend until smooth.
  • 1 Season as needed with salt and black pepper
  • 1 Stir into cooked pasta or use as a sauce for a variety of dishes
  • 1 You can then refrigerate for up to 1 week  in a re-sealable jar
  • 1 Also suitable for freezing
